Interview with Jean-François Piège where the chef measures every word: precision and rigor in his recipes, as in his decorating choices. At home, he wanted his interior to be a haven of peace, so simplicity is in order. Express visit of his apartment right bank, in privacy.
Media leader since he was part of the jury Top issue broadcast on M6, Jean-Francois Trap has a path outside standards. After making his classes in palaces, he does not stop breaking the codes! In 2009, he left the Crillon and began as an entrepreneur by revolutionizing the traditional Maison Thoumieux he will decline successfully: first with the brewery, then he launched a year later, the gourmet restaurant on the 1st floor. In a few months, the Michelin awards him two stars. He continues with the hotel and in 2013, he opens the pastry "Gâteaux Thoumieux".
At the end of 2014, the Chef and his wife Elodie inaugurate their first two-person restaurant in Clichy: "Clover" (which means four-leaf clover in English) in Saint-Germain-des-Prés. During our interview, Jean-François Piège is in full construction: he prepares the move of the gastronomic restaurant, in the VIIIth district on which it will remain very discrete. Suspense until the scheduled opening in September.
Do you work with the same decorators in your establishments?
Jean-François Piège: At every moment, its mode of expression. The choice of designers I call depends on the neighborhood. We do not duplicate. These are new intentions. For the restaurant "Clover" in Saint-Germain-des-Prés, I called on a young French architect Charlotte Biltgen; for the pastry "Maison Thoumieux" at the India Mahdavi agency.
But for the gourmet restaurant that I move in the eighth, the intention I gave to the (American) decorator, it will be the theme of the Parisian ...
What about you?
Jean-François Piège: As I can afford everything and express myself in my professional world, I need my home to be a quiet place. My wife Elodie took care of the decoration of our apartment. We wanted to create a soft and intimate interior.
Your favorite room where you like to be and spend time?
Jean-François Piège: The kitchen-stay.
The kitchen, rather open or closed?
Jean-François Piège: I do not like the expression "open kitchen"! We did just one room with the kitchen and the living room. In the past, kitchens were small with a service door while today, we live in the kitchen. In the same way, the cooks were hidden, whereas from now on, they are put forward.
The most unusual or unexpected that can be discovered at home?
Jean-François Piège: The cuisine that has a different shape and especially the choice of its color is unusual. She is light blue.
A dish unexpectedly on the go for your friends?
Jean-François Piège: It will be a recipe made from what is left in the fridge! If there is any cold meat left, I'll stuff tomatoes or improvise a chicken in my rotisserie. I like to practice "cooking leftovers" and that gives pleasure: it is a true peculiarity of French cuisine.
Where are the cookbooks of your consequent collection (of nearly 10,000 books)?
Jean-François Piège: Given the volume, there is everywhere. I arrange them according to my mood but there is nothing compulsive.
An object or piece of furniture that you could not separate?
Jean-François Piège: My mum's tiered cake dish (a mute servant), the housewife of my grandparents and a towel on my shoulder when cooking!
Your favorite color in your home?
Jean-François Piège: White and shades of beige-cream.
Your last purchase - useful or futile! - for the House ?
Jean-François Piège: A waffle maker from kitchenAid. It has the distinction of being double for use at the same time on both sides. This helps to quickly serve everyone.
And the TV, which room?
Jean-François Piège: There is in every room; we must have time to look at it. In the restoration, we live in shifted, we work when people look at it.
Do you live with music or rather in silence?
Jean-François Piège: There is no logic and it depends on my mood: it's the music of the moment. Most often, I listen to variety.
Rather candle or rather perfume of atmosphere?
Jean-François Piège: I like the candles and perfumes from Jo Malone.
Curtains, doors, shutters? What does it inspire you?
Jean-François Piège: This is important and it is part of the decor, especially for the room which is a place of privacy. In other rooms, sheer curtains or nothing at all.
What is on your bedside table?
Jean-François Piège: My Ipad, my mobile phone - which makes alarm clock -, a water bottle and a magazine.
Do you dream of one more room? If so, for what purpose?
Jean-François Piège: A beautiful wine cellar, as we see in the movies ...
Rather orderly or messy?
Jean-François Piège: A bit of both ! It's all about time. It depends on my activity.
Are you green plants, flowers, balcony, terrace, garden?
Jean-François Piège: I hate green plants, but I love flowers! I appreciate them especially since I discovered an orchideist who does fabulous things.
