Where does chef Yves Camdeborde live?

When he is not in the kitchen of his restaurant "Le Comptoir du Relais", what does Yves Camdeborde do? He is found doing his market in the 11th district of Paris, a popular neighborhood where he enjoys small businesses and where he lives. Interview with the initiator of the bistronomy.

Rendered by the TF1 show "Masterchef" where he was sworn from 2010 to 2013, Yves Camdeborde remains the figurehead of this movement called, bistronomy. For this Béarnais who began his career in the most prestigious gastronomic establishments - the Ritz, Le Crillon, the Tour d'Argent - the challenge of a revisited bistro cuisine, accessible to all, has become his business.

Pari first won at La Régalade, its restaurant in the 14th district of Paris and since 2010, in its lair of the Saint-Germain-des-Prés district, at the Comptoir du Relais. It is not in his bistro chic Art Deco that we had an appointment, but at home. From his attic apartment, there emerges a taste of authentic, that of an interior that has a soul, filled with objects that tell a story. Private tour in all simplicity on the roofs of Paris or almost ... on the occasion of the release of Volume 2 of "Brothers of the soil - Carnets de Croqueurs", a comic strip that he co-wrote with Jacques Ferrandez.

Your favorite room where you like to be and spend time?

Yves Camdeborde: What makes the charm of this apartment is that you enter directly into the kitchen which is in the center of the living space. It relaxes me: it's my universe. When I get home, I open the fridge and I cook! It is very well organized with a work plan and there is a wooden table where you can eat on each side. When I visited it a year ago, I liked its simplicity and its luminosity: its visible beams, its roof attic and the big velux which allows to see the poetic Paris. I read the history of Paris ... The exhibition and the light are indispensable for me.

Your furniture: rather modern, ultra design, family, pitcher?

Yves Camdeborde: Antique furniture flocked left and right, with many small favorites that I assemble over time.

The most unusual or unexpected that can be discovered at home?

Yves Camdeborde: No one sees it but I love to lie down on the floor, it is a refreshing contact. I like this cold contact especially in old buildings. Besides, I'm still barefoot. So no carpet.

An object or piece of furniture that you could not separate?

Yves Camdeborde: My art pieces. They are mismatched but behind each, there is a story of men, a situation of my life. I have been collecting since I was young. These are objects that have above all a sentimental value: a sculpture of San Sebastián - a wooden monkey pointed with small darts - directed by Frédéric Brandon; a Brazilian blue stone carved in the shape of a fish signed by Blaise Charlet; a painting by Pat Andrea, a souvenir gift from my period at the Régalade ...

I also have pretty drawings of humorists: Roger Blanchon had given me one for my 40 years and I acquired another of him after his death, which represents the rise of the Puy de Dome by Jacques Anquetil and Raymond Poulidor in 1964!

Your favorite color in your home?

Yves Camdeborde: The Red. But at home, what dominates is the color of the wood. The only touch of red is a little ceramic bear bought from a friend artist Annouck Dupont. It was a series of five: I gave the other four to my best childhood friends. Everyone has their bear!

Your last purchase - useful or futile! - for the House ?

Yves Camdeborde: A steamer! And for futile purchase, a Bose speaker!

A dish unexpectedly on the go for your friends? Your specialty?

Yves Camdeborde: Depending on what I would have bought on the market. I love fruits and vegetables, there are always as well as raw ham, eggs.

And the TV, which room?

Yves Camdeborde: No TV. It's futile. There are more rewarding things to do: I like board games: cards, tarot, belote, chess, ladies ... We play with friends on a glass coffee table, in total relaxation. In front of a scrabble game, I am the happiest of men.

Do you live with music or rather in silence?

Yves Camdeborde: Total music: soul and old French song: Georges Brassens, Yves Simon, Brel ... I am sensitive to texts. Apart from a tasting of dishes, what moves me the most, are the words, the writings ... I started reading at age 17: the trigger was reading the "World according to Garp"That fascinated me, I read it three or four times, reading is a rest, 99% I read authors I know to understand them, sometimes friends, clients, meetings ...

Rather candle or rather perfume of atmosphere?

Yves Camdeborde: I hate room fragrances but I like candles. I would like to have a fireplace. Fire is magic! He is a friend, an exceptional presence.

Rideals, doors, shutters? What does it inspire you?

Yves Camdeborde : I am on the top floor and I do not hide. It's too beautiful to see the light of day and the roofs of Paris.

What is on your bedside table?

Yves Camdeborde : A big crystal of Madagascar, a stone of happiness that a dear friend offered me; always the book of the moment and alas, my cellphone! I've just finished "Bye Bye Blondie"Virginie Despentes, who spellbound me.

What storage for your books?

Yves Camdeborde : I am invaded! I stack them but I keep all those who liked me: they are images, moments, memories. The only old books I can read are cookbooks. They allow me to understand the past ... My personal collection includes more than 2,000 cookbooks.

A deco or rangem trickent?

Yves Camdeborde : I like that the storage is decorative and have a story. I keep the boxes of Jacques Genin caramel candies: they are stacked in a column and I put all my board games there. This is my trademark: my friends love it. Another storage trick, I found at an antique dealer, an old colorful circus drum: I made a small chest.

Do you dream of one more room? If so, for what purpose?

Yves Camdeborde: A terrace 5 to 6 square meters on the roof to live as often as possible outside: take a coffee in the morning, read, look at the sky ... The air and light I miss.

Rather orderly or messy?

Yves Camdeborde: Orderly but not maniacal. This is part of the rigor of my job!

Are you green plants, flowers, balcony, terrace, garden?

Yves Camdeborde: I'm going for a nice little terrace but no garden. As a farmer's son, the toil of the land has marked me. If I defend the values ​​of the soil, I do not have the green thumb.

Your addresses or favorite brands for the home (shopping, decoration, florist, etc.)?

Yves Camdeborde:

- The junk shops in the rue du Marché Popincourt because I do not like buying new!

- The Portuguese and Brazilian bookstore at 21 rue du Fosse Saint-Jacques, 75005 Paris.
