Where does pastry chef Christophe Adam live?

Interview with Christophe Adam, the "genius" of lightning. It is in his loft of the 20th district of Paris, that the shooting of the photos of his new cookbook "Les éclairs" (Éditions La Martinière) was realized.

True ambassador of lightning, Christophe Adam has been able to give back his letters of nobility to this pastry which he revisits with talent and refinement. Elected "best pastry chef" of the year 2015 by the Guide Pudlowski, it is also found in the jury of the show "Who will be the next great pastry chef?" de France 2, alongside Christophe Michalak, Pierre Marcolini and Philippe Urraca.

This Breton who has gone through prestigious houses - Le Crillon, Beau-Rivage Palace ... and especially at Fauchon where he had a decisive role of artistic director - is constantly in turmoil. His inspiration, he draws on his travels and the energy of major cities.

In 2010, he launched the fashion of sweet snacking, exclusively at Adam's, by opening a shop in the 1st arrondissement of Paris. Two years later, it comes to him the idea to imagine a collection of lightning, under the brand "L'Éclair of genius", in the district of the Marais. Since then, he has linked books and sales outlets, five in Paris and five in Asia.

At the time of our meeting, he had just arrived from Japan where he had just inaugurated the shops of Osaka and Kyoto before returning to Korea and Hong Kong. Visit necessarily flash in his loft, very monastic.

How did you build this loft?

Christophe Adam: It was an old garage, rehabilitated into a small apartment building. When I arrived, I did everything in my own way during three big months of work. I wanted to leave it in its juice so raw, and my only bias was to install windows everywhere: two in the living room and two in the rooms that are upstairs. Its asset is to give on a patio of 25 m2 raised, located full south. Between May and September, I enjoy a beautiful light.

How do you heat such a volume?

Christophe Adam: I installed on the 1st floor, a floor heating only, and it warms all the whole.

And on the choice of materials?

Christophe Adam: On the ground, I opted for a light gray waxed concrete and in the rooms of the light oak. It is an interior where raw materials dominate. If I had to change it, I would certainly do otherwise, I'm already thinking about it.

Your favorite room?

Christophe Adam: My toilet. They are funny because I painted them in Irish green. And it's the only place colorful and filled with objects: sports medals, my trophies for best pastry, old family photos ... I love this offbeat side.

Your furniture: rather modern, ultra design, family, pitcher?

Christophe Adam: Everything is new. What dominates: wood, steel and polished concrete. The only purchase I have to make is a couch because it has lived well!

The most unusual or unexpected that can be discovered at home?

Christophe Adam: A concrete pillar, in its juice, very damaged, which is in the center of the room.

An object or piece of furniture that you could not separate?

Christophe Adam: The large table in raw oak where one can eat twelve people, as well as the library.

Why the library?

Christophe Adam : I always dream of having a library. This one I drew and made custom. It is mounted with wrought iron painted black, like the staircase. My own literature is only cookbooks, pastries and chocolate. They are sometimes stowed, sometimes brothel. I have several hundred ... My favorite is "In the heart of flavors" Frédéric Beau. It was a click when I started my job.

Your favorite color in your home?

Christophe Adam: A dominant gray and wood, a section of wall in white and another gray blue. And the toilets in Irish green!

Your last purchase - useful or futile! - for the House ?

Christophe Adam: A small dresser for storing papers. I found it at "Maisons du Monde".

The kitchen, rather open or closed?

Christophe Adam: Open with a central island. And I was able to put my little wine cellar under the stairs leading to the rooms.

A dish unexpectedly on the go for your friends? Your specialty?

Christophe Adam: Pasta with carbonara.

And the TV, which room?

Christophe Adam: In the living room. I only watch it on weekends.

Do you live with music or rather in silence?

Christophe Adam: It depends on the moments. I listen to everything but mainly variety.

Rather candle or rather perfume of atmosphere?

Christophe Adam : Perfume diffusers. I just love it.

Curtains, doors, shutters? What does it inspire you?

Christophe Adam : I have not had time to put them in the living room: I chose a yellow mustard fabric. And in the room, I preferred the bay window.

What is on your bedside table?

Christophe Adam: In my room there is the bed and a dresser. Nothing else so no night stand, or frame or trinket.

Do you dream of one more room? If so, for what purpose?

Christophe Adam: No, but I would like to redo another apartment. I love taking care of the works, plans, design ... as for the layout of my shops.

Rather orderly or messy ?

Christophe Adam: Very orderly.

Are you green plants, flowers, balcony, terrace, garden?

Christophe Adam: Only green plants, no flowers, and only outdoors.

Your addresses or favorite brands for the home (shopping, decoration, florist, etc.)?

Christophe Adam: I buy a lot on the Internet. I remain very faithful also to the Breton craftsman who made my library. He works beautiful essences.
